High-performance dehumidifiers provide an ideally balanced, constant ambient humidity level – essential for the ripening of cheese.

In the food industry, requirements concerning the ambient climate are high. If temperature and humidity values are not exactly matched to the product, this has a negative impact on its quality. The consequence may be an increased amount of rejects. In special cases, this can even lead to production stops. The right climate is essential, particularly in highly sensitive areas of food production. One of these areas is cheese ripening. The ripening of young cheese may be the most important step in cheese production. For soft cheese, the ripening process takes several days or weeks. For sliced and hard cheese, this process even takes several months or years. The climate plays a significant role in the development of cheese and the assurance of product quality. Usually, the temperature ranges from 7 to 15 degrees Celsius and the humidity level from 75 to 95 per cent. The optimal climate values are determined by the producers. In order to maintain the exact values and keep them on a constant level throughout the ripening process, storing the cheese in a humid basement room is far from sufficient.

Optimum ripening on a permanent basis

To make sure that the cheese reaches the desired degree of maturity and neither develops mould nor dries out, the use of dehumidifiers is indispensable in cheese dairies. After all, depending on the product strength, valuable stocks are stored in these rooms. These stocks have to be protected and allowed to mature until they reach the optimal quality. The stationary industrial dryers of the DH series from Trotec are reliable and make a good job of it. They are individually adjustable, do not require any additional fresh air supply and can be adapted optimally to every climate requirement – while keeping operational costs low!
